2 cups raw nuts (I used a combination of almonds, cashew, and walnuts)
3 Tbsp coconut oil
3 Tbsp equivalent sweetener
3/4 tsp cinnamon
3/4 – 1 tsp cayenne pepper (or to taste)
Preheat the oven to 120°C. Heat the coconut oil in a sauce pan over medium low heat. Add the sweetener and the spices and cook until the sweetener has dissolved, stirring occasionally.
Place the raw nuts in a large bowl and pour the spice mixture over the mixed nuts and toss to evenly coat. Spread the mixed nuts on a parchment paper lined rimmed baking sheet. Bake for 20 minutes, stirring halfway through.

Variation: just salty
Replace sweetener and cinnamon with 3 tsp sea salt.
