After hours finding two recipe that doesn't cost me a day of time to make them and the kids really like it (the first recipe).
I hope I can give some inspiration to other healthy families. Enjoy!
Cinnamon Toast Crunch:
(The original recipe from foodiefiasco)
1 cup chickpea flour (I couldn't find and made my own from dried chickpeas)
2 Tablespoons applesauce
1/4 teaspoon salt
3 packets of stevia (Feel free to use more or less, depending on how sweet you like things, or use honey if you prefer natural.)
3/4 cup water
2 teaspoons cinnamon
Preheat oven to 190°C. Line a cookie sheet with parchment paper or a silicone mat and set aside.
Ina large bowl, combine chickpea flour, salt, stevia, and 2 teaspoon cinnamon. Add water, applesauce and whisk until completely smooth. Believe me, you do not want clumps of chickpea flour hanging out in your cereal.
Pour the batter onto the lined cookie sheet, and spread it out evenly to the edge of the sheet. In a small bowl, stir together. Bake in the oven for 22-27 minutes, or until the edge are brown and the center is just starting to crack.
Remove the parchment paper or silicone mat from the sheet (don’t burn yourself!) and cut the cereal into 1 inch squares. Do not eat all the squares during this step. Before sticking them back in the oven for 2-4 minutes, sprinkle with some honey for the kids taste. Let the cereal cool completely so it can crisp up . Serve with almond milk, or your favorite milk of choice.
Serving size 1 cup: ~91 calories, ~13 grams net carbs, ~4 grams sugar, 6 grams protein
Another tasty recipe, although the kids do not like it!
Cinnamon Faux - Crunch
(The original recipe from I Breath...I'm hungry...)
1/2 cup milled flax seed
1/2 cup hulled hemp seeds
2 Tbl ground cinnamon
1/2 cup apple juice
1 Tbl coconut oil
Combine the dry ingredients in a Magic Bullet, blender or food processor. Add the apple juice and coconut oil and process until fully combined and mostly smooth. Spread the batter out on a parchment lined cookie sheet until nice and thin – Bake in a preheated 150°C oven for 15 minutes. Lower the heat to 120°C and bake for another 10 minutes. Remove from the oven and using a pizza cutter or knife, cut into squares about the size of the keys on your computer keyboard. For the kids, sprinkle some honey over it and let it dry. Enjoy!
